Onion (Green Heart Farms)
Garlic (Lee & Maria’s)

Ingredients:

  • Preparation for 4
    • 1/2 onion (Green Heart Farms)
    • 1 tbsp minced garlic (Lee & Maria’s)
    • 1 pinch saffron
    • 1.5 cup arborio rice
    • 1/4 cup white wine (Coopers Hawk Vineyards)
    • 6 cup hot vegetable stock
    • 1/4 cup grated fresh parmesan cheese
    • 2 tbsp cold butter
    • 16 individual bocconcini balls

    Breading: 

    • 2 cups flour
    • 6 whole eggs
    • 3 cups panko

Making Arancini

  1. Saute onion in heavy bottom pan in olive oil
  2. Add garlic and fry till fragrant
  3. Add saffron, stir
  4. Add rice and stir to coat all rice with the oil approx. 18-22 mins
  5. Add butter and parm.  Stir to combine.  Add salt to taste.  Cool fully.
  6. Divide rice into 16 balls  Stuff each with cheese ball and reshape.
  7. Bread each ball (flour/egg/panko)
  8. Deep fry 5 minutes until golden brown.

**Serve with Marinara and Fresh parmesan cheese.
